No, you really need to use whole wheat flour for chapatti or else they will be tough and rubbery. There are some other types of Indian breads that use all purpose flour, but not this one. If you cannot find the Indian chapatti atta, you can try the whole wheat flour from American grocery stores. The color and texture of the chapatti may be slightly different.

Wow thanks! My husband is from India and over the past 5 years, I've been practicing Indian cooking every day. I've mastered almost every other dish, and all our Indian friends eat at our house now, lol. But the one thing I could never do was naan or chapatties! But I will try your recipe, because it looks really good! Before when I tried other recipes, they always come out rock hard, and tough and they never puff up at all. I'll let you know if I am successful with these.

SMTC, I love these helpful videos. I often go to a Burmese restaurant that serves "Thousand Layer Bread", I'm convinced they are chapatis/parathas. I saw the technique in the Spinach Paratha video to make it more layered. But the restaurant often serves the bread with a Curry Potato or Curry Chicken sauce, on the side. Is this popular? Any hints for the Spicy Curry Potato sauce? Thanks, great videos!

Hi! Thanks for your tip about using the chopper blades to knead the dough in the food processor. It does work better than plastic one. Also, I had never tried freezing the dough before and it turn out just fine. Normally if the dough is kept in the fridge it becomes a bit dark after a day. But the frozen and thawed dough did not change any colour. Thanks for all the efforts that you are taking in creating these videos.

Hi ...flower, We use chapati atta (whole wheat flour) available at the Indian grocery store. You can use the whole wheat available at any US grocery store, but it is less refined and therefore, your chapati will be darker in color. The texture may also be a little different but will taste fine.

While rolling, we tend to put more pressure in the middle of the chapati and release the pressure as we reach the outer edges. So, the middle might be rolled too thin to puff. After you finish rolling, if you rub your hand across the chapati, you will notice the uneven texture. Try to roll it so that it is even all the way across. Also, gently press with a spatula on the portions which have puffed to force air into the portion which has not puffed. Also, practice makes perfect :)

thankyou so much SMTC. i prepared it the way u had instructed and it turned out really fluffy and nice.but again, all three chapathis i made became fluffy only in the sides and not in the middle.the center part of the chapathi doesnt swell even when i press it. y does this happen?

Are you using oil in the dough? Oil keeps the chapati from becoming too chewy and hard. Also, after you cook each chapati, keep it immediately in a covered (preferably insulated) container. With this recipe, your chapati should remain soft. You can warm them again on the open stove or tava, but NOT the microwave. Good luck!

There are a lot of different ways of making a paratha...one of the ones you mentioned, then there is plain pratha (like the one we have done) and laccha paratha, pahadi paratha amongst many others. Paratha is usually when the 'roti' is fried, with or without oil inside it.We will be doing the other types of parathas soon...look out for them.

This is different from Paratha in that the Paratha rolling out technique is different. It involves folding over and adding more oil to the dough after you have kneaded it. Thats what gives the Paratha its characteristic layers.
